How to get rid of the Date on the Nikon camera?

Good DSLR camera to photograph children?
My husband and I are looking into purchasing a DSLR camera. We have been looking at the Canon EOS Rebel t3i and the NikonD5100. They are both priced roughly the same. From what I can tell the Canon has more MP than the Nikon but not much. My husband and I really know very little about dslr cameras. I just know I want one that doesn't have a slow speed in between pictures and can take good action shot pictures as my boys play sports. Maybe there's even another camera that would fit better that I haven't come across yet? Any input would be greatly appreciated.
Difference between Nikon J1 and J2?

What settings do I set on manual SLR film camera for night?
I have a Nikon FM2 film camera, and the film is Ilford HP5 plus 400 Black & White.
I'm taking photographs of Christmas Lights in the dark, and I'm wondering what settings will I need to set for these photographs.
Added (1). EDIT: This is for college work as to relate to the theme of Time & Place, which I will also produce photograms onto these photographs of christmas lights.

What should I be looking for in a good camera?
I'm getting a photo camera for my birthday, one of those camera's where you can manually zoom in by turning the lens (I probably sound really dumb now xD) And I have to choose between three types and my budget is 200 euros. Should I be picking a camera that can zoom in very far, a camera that can take pictures with a good amount of megapixels, or a camera with fast shutter speed? Is it a good bonus if it has a charger? (I've had one without and sometimes it gets really annoying) Also, for a beginner who doesn't really know alot about camera's what brand do you suggest? (Canon, Nikon, Olympus, Fujifilm,… )
What does FX mean please?
Film Slr Cameras with spot meter?
Can you tell me some cameras like Yashica Fx-2, Olympus OM 1, Nikon Fe 2 etc but with spot meter. ( i mean with an exposure meter that measurs light just in the small center, instead of reading the light in the whole frame )
And they have to be full manual, i don't want any aperture priority and stuff. Simplicity!
