Which camera nikon or canon?

I'm looking to buy a camera worth 500 euro. And 500 euro lens. Which would be the best quality camera, canon, nikon?

They're basicilly the same thing. It just depends on what you want with the camera. They both have similar cameras with the same quality. They both have similar lenses for SLRs too

Why don't you got to a shop and see what cameras are in your budget and have a go with them? Ultimately any entry level DSLR (Nikon, Sony, Pentax, Canon -- there's more than two brands you know) will do pretty much the same thing. How it performs is going to come down to you and there's no point me recommending a Nikon for example if once you try the camera you prefer the button layout of the Canon or the size of the Pentax.

For 500€ you could get Canon EOS XS/1000D, T3/1100D, 550D and Nikon D3100.

There's no better brand. Image quality is the same on all, it's not like Canon has 8% better quality.

A 500€ lens? Usually people ask for lenses based on what they want to shoot - you already get a good 18-55mm lens with most cheap cameras.

This is a good question. Both Nikon and Canon have comparable camera quality.

Nikon has been on the market of high-end, high-quality, professional cameras for a little longer though.

In your case it would depend entirely on the specs of the camera and lens you can find for 500 euro each and not so much on which of the two brands.

As I work in a camera store, I'm asked this very question on nearly a daily basis. My reply is mostly the same: Whichever one feels the best in your hand, and has the controls where you feel they best fit your personal preferences.
As for a direct comparison of the two, that is an impossibility, as they both have advantages over each other. I can go into a quick Pro and Con though:
Canon, Pro: Lens build quality very high; More prime lenses are offered; Menu and controls are a bit more straight-forward and less hidden/confusing; Stellar high-ISO performance Cons: auto-focus tracking is not as reliable.
Nikon, Pro: Legendary Nikor glass is outstanding; CLS; Auto-focus tracking is superb and steady; SB Speedlights are perhaps the best on earth; Cons: Confusing menus and button layouts; Aperture-indexing lenses; plastic construction of certain newer lens groups.

As for glass, I know people who shoot Canon and they'll get the adapter mounts to use Nikon lenses on them. Canon glass is great, but there are always going to be a few examples from either camp that are far superior than their counterparts.

I shoot Canon. The controls are right where I want them, and menus are easy to find and understand. Canon glass is priced lower than its Nikon equivalent. I use Canon 580 EXII speedlights to optically trigger Nikon SB26's. I have a Nikkor 50mm with an adapter I use to shoot video.

Probably the same, there isn't really much difference between the two brands, both have capable products, and often it's a matter of personal choice.

In terms of best quality possible, for €1, 000, you're better off with buying a comprehensive Mamiya RB67 Pro S setup. I'd get three Pro-S 120 film backs, a 65mm KL, 90mm f3.5 KL, and 127mm f3.5C, and a good tripod. Nothing is going to beat that, not even a Hasselblad H4D.
