see how these colors are more bold, id say matte and vibrant in all compared to most

I want to know how I can get my photos like this, whether it be my dslr or my editing software.

I use gimp for editing and I have a nikon dslr i don't know the exact number

just what id need to do to schieve these colors

It's a process called tone mapping. In these images, it appears to be done as part of the HDR processing, but it can also be done on single images. Photomatix is the most popular program for making these effects.

These look like HDR images which are created using 3 or more bracketed exposures.

The images are blended in HDR software and tone mapped to create the effect you see.
