What camera would be best for me?

Right now I'm starting out in Photography.
I have a Pentax K-10 D and I want to get a new camera, mainly because I want something a little newer and something that has the option of recording video.
So I have some DSLRs picked out and I'm not sure which ones to go for.
I'm just a amateur and I usually take pictures of horses in action and portraits, etc.

The K10d is a great camera. It's actually an advanced model during its time and is more than enough for the shooting you do. If you want to do video, I advice you to get a video camera instead for better control.

Both are decent entry level cameras.

Why aren't you considering Pentax anymore? At least if you stay within the brand, you can use your old lenses since they should compatible across all camera bodies (to varying degrees). If you're going to shoot a lot of video though, I would not recommend the Pentax K-r, since it has a tendency to overheat after like 20 minutes shooting in short intervals. (Or at least mine does this, not that I mind since I very rarely need to shoot any video at all.)
But yeah, I'd recommend looking at Pentax again.

DSLR cameras come in three grades:

Both Canon and Nikon make nice cameras. I can recommend two entry level Digital SLR Cameras to you.
1.Canon EOS Rebel T3 Digital SLR Camera
For the small price, Canon EOS Rebel T3 camera really packs a big punch. This camera is great for the beginner photographer, and even for the more advanced photographer. 2.Nikon D3100 Digital SLR Camera
D3100 is better than T3. But it is more expensive than Rebel T3.
Advantages of D3100 are:
1. Higher Movie resolution - 1080p vs. 720 p (T3)
2. Lower Noise at high ISO
3. Has cleaning sensor (not in T3) which is important features
4. Large Sensor
5. More focus point - 11 vs. 9 in T3
6. Better colour depth
7. Large LCD screen
