How to take pictures like these?

I love her pictures, especially the ones with the sun in the background. I have a Nikon D5100. What kind of settings should I have it set to?
Any photography related help is appreciated.

You need to learn how to see light and how it falls on your subjects and you need to learn how to use your cameras light meter.
