Your D5100 is designed to capture digital still images. Video and audio capture are convenience features. Your dSLR is not a camcorder. That's why it may overheat (pages 105 & 108) and automatically shut down until cool enough to use safely… And why there's a file size limitation (page 108) that camcorders do not have… And why a mere 3 pages in the manual are for video capture while the other 200+ are for still image capture…
Just in case: There's no RAW video capability with the D5100. You can check Magic lantern and possibly ruin your camera with new firmware - and the camera will no longer have warranty coverage…

You don't! Video is recorded in H.264 - about as far from a RAW format as you can get.

Just shoot it. What you get in-camera is RAW. When you copy the video to your computer and tinker with it, that's no longer RAW.

You have the wrong Nikon digital SLR if you want to shoot video in RAW.
At this time only the Nikon D4s, D5, D800/D800e, D810 and D500 can shoot raw video, however you will need a device like a Ninja 2 and a large SSD to record that RAW video using the HDMI connection. Both the D5 and D500 also shoot 4k video
