Buy the one that feels right in your hands, and don't close your mind to Pentax or Sony either.

The 18-55mm will get you started, but it's YOUR skill and technique that make the difference, not the label on the camera.

I have the D3100 and think its brilliant, i'd definitely recommend buying a book that will show you how to use all of the different features. You can still use it in auto and it will sort things for you, but i prefer to use it in programme (p) pretty much the same as auto, but less pixelated images when zoomed in. I don't know much about the canon so can't comment on that but you should be able to get pictures like this either with careful editing or knowing the right settings to use.

The Nikon D3100 has a much better specification than the Canon EOS 1100D. Buying the camera with a kit lens is cheaper than buying the camera body and lens separately.
The example picture you show was taken with a 50mm focal length lens and with the aperture set to f2.8, to take a picture like that you would need a lens like this - http://www.amazon.co.uk/...004Y1AYAC/
To focus on one thing and leave everything else out of focus you need to use a low f number like f2.8 or less, read up about 'depth of field'.

Just go for the D3100. Its nikon's best entry-level dslr and trust me, its amazing. And it also takes fantastic Full HD 1080p video.\

Atoher: good iso, good wb etc.
