The difference in use is zoom range.
In approximate terms:
At 55mm standing 10feet from a person you will get head to toes in the shot.
At 140mmm standing 10 feet from the person you will get head only.

The 18-140 will do everything the 18-55 will do and more besides. If you can afford it go for the 18-140.

Only downside - it will be bigger and heavier than the 18-55

My choice is the 18-55mm WHY? I took a class on photo correction where the instructor invited people to bring in their camera for the second class. There was this (small framed girl) who had a Canon DSLR out-fitted with a 18-135mm lens. The whole outfit said to me.TOO BIG! TOO HEAVY TO CARRY AROUND!

For my outfit I added the 50-200mm lens which is about the same physical size as the 18-55mm lens. As a result I'm a happy camper!

The difference between the two lenses is that the 18-140mm has more magnification as well as weight, which I have already discussed.

The scenario is simple, When your subject is not close enough and you need more magnification you change lenses and add the 50-200mm or what ever is the next size in the Nikon brand.
