What's better a nikon or a cannon?

Cannon is a superior brand than Nikon. The dslr model of cannon is very popular as well.

It depends upon the model of the cameras

The Canon T3/1100D and Nikon D3100 have similar sensor performance.

When you start looking at the next step up, the Canon T3i/600D and Nikon D5100, the D5100 sensor performs much better, especially in low light.

The new Nikon D800 is the only "entry level", full frame, professional quality dSLR that can shoot uncompressed video directly to computer or other suitable storage device.

Only you know what features you need, so in the end, you will have to visit a proper camera store and see which brand suits you the best

I have like Canon (please note spelling with one "n"), all my life. But it all comes down to what YOU like. My latest DSLR was a Pentax because I like the viewing screen better than Canon or Nikon. And I hadn't any lenses specifically for digital. So I was starting from scratch so to speak.
