Out of these two prime lenses, which is better for shallow DOF?

Is the f/1.8G worth the extra money?
(The AF and AF-S options really don't make a big difference to me).

DOF work can be done with any lens out there if you know how to operate it properly and know how to light or control the amount coming in.

Of course it's much easier with an f/1.8 lens - you don't actually have to learn anything about photography because the lens will do it for you.

Fact is the wider the aperture, the shorter the field.

See if you can afford Sigma 50mm f1.4, that's one of the best 50mm for its price.
These two Nikons however, will do the job and as far as DoF is concerned, there should be almost no difference, G version is newer so makes more sense, besides it has faster focusing speed, is quiter and quality of boken is relatively (slightly) better on G.

They both have f/1.8 and similar design, so it won't be that different. The 1.8G is however a better option, it's a few months old, will work on all Nikon's and is amazing!
