What do you mean by softening the pictures?
If you mean a portrait with a soft or blurry background, with the subject in focus, that is achieved by opening your aperture as far as it will go.
This is a function of having a "fast" lens rather than the camera, and is one of the advantages of having a DSLR, as you can get a faster (and more expensive) lens to achieve that effect.
But there are a few compact cameras, such as the Nikon P300 that have fast lenses. This should give you a nice blurry background, but perhaps won't be quite as nice as what you can potentially achieve in a DSLR with a purpose-built lens. But it might be enough for your needs.
The reason you need a fast lens is that the faster the lens, the more you can limit the depth-of-field, which provides a more pleasing background. You can get some effect with any lens by using the largest aperture opening you can (smallest f-number), but the faster the lens, the better the effect.
