Which one of these cameras are better?

The Nikon D5000, the new Nikon D51000, Canon EOS Rebel T3 with EF-S 18-55mm f/3.5-5.6 IS Kit or EOS Rebel T3i with EF-S 18-55mm f/3.5-5.6 IS Kit.

Added (1). I don't care price wise, I just want to know which one would take the best quality pictures and the easiest to use, but mostly just the best quality.

The D5100 and T3i are the newest versions of the entry level cameras

The best quality images are really dependent upon the skills of the user, not so much the camera.

Anything with a Nikkor or Canon lens is great. Canon is unbeatable.

The d5100 or the T3i. I'd skip the t3 altogether.
The sensor on the 5100 is supposed to be pretty hot right now. I'm not a fan of the low end Nikons, personally. They do not have an auto focus motor in the body. Meaning that you either have to purchase lenses with the motor in them-costing more-or you are going to only have manual focus. I think that whole concept is silly and I'd rather pay one time for the motor to be in the body.
Now the Nikon d7000? Pretty impressive even to a professional canon shooter.
It's really about which one FITS you: Literally fits your hands-one will feel right in your hands, one won't. One will be easy and intuitive for you to change settings and work with-the other won't. For me it's Canon. For many it's Nikon.
Go to Best Buy or something where you can hold and play with both of them.change settings and play with the menus, take a few shots and get a feel for each camera.one of them will pick you.

Nikon d5100 will take the best pictures and good videos, and Canon t3i will take good pictures and best videos. You choose.

My D5100 just arrived and i'm extremely happy with the camera. The grip feels great, the quality of the photos is awsome, and it has excellent low ISO features. I highly recommend this camera. I've only had the D5100 for a few days, and I love it. I loved it out of the box. Before buying it, I'd been considering the more expensive Nikon D7000 and the Canon EOS 60D. But being the type of guy who is in general very technology/gadget challenged, I knew I'd never use 90% of the available features on either camera, so I couldn't really justify the extra expense.
