Which camera would you choose out of these?

You've named the same camera twice… The 60D for sure.

I'm a nikon man so I'd go for the d5100. The 60D is a higher class of camera though.

On this list I wouldn't pick any of them. What I would do is wait, and see what Nikon and Canon do between now and this summer, those cameras are getting a little old. While the high end dSLRs might only get refreshed every 3-4 years, the lower end stuff gets refreshed a lot sooner. Check out Sony's new Alpha A57, get familiar with it, and then compare it to the new Canon/Nikons, and then make a choice.

I know you didn't list it, but get the D7000 Nikon if you can
Out of your list I would go for the 60D
