Which camera is a better or a better deal?
I'm thinking of getting Nikon D3100 14.2mp dslr camera with 18-55mm vr lens vs Canon EOS Rebel T3 12.2mp dslr camera with 18-55mm lens AND 75-300mm zoom lens both are $600 I plan on taking outdoors/woodsy pictures/videos like deer?
The Canon 75-300 is junk. Check out the 55-250 IS. There aren't any huge differences between the T3 and the D3100 other than the D3100 is better in low-light/high ISO situations.
I like the Canons better because i've had more experience with them. The T3 has better maximum light sensitivity, larger viewfinder, has a built-in focus motor and has a longer battery life. The difference between the image quality of both would not be very noticeable as both are equally great and capable of taking excellent shots. And i agree with the first answer you should rather get the 55-250mm lens. Here's a link to the camera's review, read it as it will help you in making a decision:

You can look at the price of the camera with the 18-55mm IS II Lens + Canon EF-S 55-250mm f/4.0-5.6 IS Telephoto Zoom Lens, its a couple of dollars more but it's worth it:
