What manual settings would I need to get a picture like this?

So I'm taking a few pictures for a friend next week, and I want to get a picture with this type of lighting (obviously i don't have a model like this, but regardless)
I have a nikon d3000 and a photo setup room with umbrellas, backdrops, etc.
What manual settings will i need… How much of it will be editing?

You can get a shot like this without any post production using pretty much just the equipment you have. The only problem is that this image was made using a softbox. Your umbrella will be similar, but the shadows will by much harsher.
Position your subject about 2 feet from the backdrop. Position the umbrella about even with the subject's head and 3-4 feet to the side and just a few inches in front of the subject.
There's a small amount of fill light in this image. This is probably from ambient light in the room since there are no catchlights in the subject's eyes. You might need a reflector or white card on the opposite side of the light in order to toss some fill into the shadows.

The BW and the grain is likely decent editing.
If you look at the eyes you can see there was a big light source to the left of the photographer and a dim one to the right. The dim source could be a window, could be a distand reflector. There's not much shadow behind the model so that could be another light source right there. Judging from the DOF and the overall look I think this was shot with a fast 50 or 60mm lens
