Nikon vs Canon Video?

I was curious if someone could tell me what the difference was. One thing I noticed when messing with Canon and Nikon Video (D90 and 7D) was that when I adjust things on the canon side, such as aperture, iso, and shutter speed, it actually affects the outcome of the video. However, when I do it on the Nikon, it doesn't affect it at all, and the only way to change the lighting on the Nikon is to change the Exposure. I was wondering why this is, and if this happens on all of the Nikons.

That's because first Nikon Video models didn't allow you to change settings, while Canon allows you in all of their DSLRs (except for T1i).
