I'd go for the D3100 if you can swing it
It is the updated version of the entry level camera that replaced the D40. However, the D3100 is the current replacement for both the D40 and D3000
The D3000 is newer, and you are more likely to find an unused one at a reasonable price. The 10 MP CCD of the D60 and D3000 is not really technically advanced over the D40's 6 MP sensor, so the D40 might have a little less noise. The processor of the D3000 is newer. The D3000 is supposed to have an anti-dust feature the D40 lacks. The D40 had a weaker anti-alias filter than most. That gave it crisper looking images with almost as much detail as the 10 MP sensors. However, in some situations the D40 had more moire artifact because of that weaker anti-alias filter.
Nikon really goofed with the D3000 which was supposed to replace the D40. They didn't include Live View or Video capability and kept the CCD sensor. Since consumers were wanting Live View, Video capability and a CMOS sensor Nikon quickly dropped the D3000 and introduced the D3100 which has the features consumers want.
So if you're looking for a Nikon then go with the D3100.
