Is it possible to shoot slow motion video on a nikon d5100?

Nope. High speed cameras are very expensive. You may be able to do it in software.

Using 60 frames per second, if this is possible, would be the best frame rate to use.

The Nikon D5100 has three frames per second (fps) choices - 30, 25 and 24. You need at least 60fps so you'll have to learn how to do your slow motion video using software.
