Are you using it like a point & shoot, or actually using it like a DSLR?

You can change the Color space to "Vivid" or "Vivid +" to get brighter colors… Or just get the exposure right.

The ISO is the light sensitivity or film sensitivity button, and that will dramatically affect the outcome of the exposure
white balance matters, too
and shutter speed, of course
so many factors
don't forget aperture, or lens opening diameter

You have a semi-pro camera. You adjust colors for those cameras using editing software like Photoshop. DSLR cameras are not made to give you perfect photos without post processing with software.

Atmosphere, exposure, direction of light either natural or artificial, white balance, lens construction, color contrast, lighting ratio, if you can tell us what these conditions were like we can instruct you to an environment more conducive to brighter colors.
