The best book you should pick up is the Nikon D5100 Digital Field Guide and it's available on Amazon and most major bookstores. It explains in plain language all the features in your camera and makes it all really easy to understand with examples of what everything does. These Field Guide books are awesome for any camera user beginner or expert.

As for general photography books, that really depends on what you are looking to shoot. Landscape photography is different than commercial photography which is different than shooting models. To get started though, I suggest you get two books by Bryan Peterson, "Understanding Exposure" and "Bryan Peterson's Understanding Photography Field Guide: How to Shoot Great Photographs with Any Camera". These are two awesome books that can get you started.
