My Nikon D40 sets the EXIF header at 300 dpi. But, who cares! Canon cameras set the EXIF dpi header to 72 dpi and images from those cameras come out great. The dpi setting in the EXIF header in the image means absolutely nothing. You can set this number to anything you want and it will not affect the image. You can try this with any EXIF editor (EXIFtool or Photoshop, for example). What is important, in this respect, is the number of pixels in the X & Y directions.
When dpi matters is when you do commercial printing which means knowing the printing parameters the service requires. If you are doing home printing, the software will figure out the proper parameters. Or, if printing at your local drug store, they will figure out the proper parameters for the process.
