You would gain the ability to:
- autofocus AF lenses (as the D7000 has an internal focus motor).
- properly meter AI lenses (as the D7000 has a built-in AI "feeler").
- align lenses to your camera (it has a focus offset adjustment).
- remote control speedlights using the CLS commander built into the D7000.
- use FP High Speed Sync for shutter speeds up to 1/4000 using a flash (with the proper speedlight).

Personally, if you already own the D5100, i would put the money to a lens
The other responders both gave very good answers. You would also gain 39 point focusing and dual memory card slots. However, the 7000 is considerably heavier and you lose in camera HDR, articulating view screen and not sure, but I believe the infrared port for using the remote release. You might gain some exposure quality, but highly unlikely to gain anything in the image quality due to identical sensors. I have a 5100 and I would NOT trade even up for a D7000 due to losing some of the nice features I listed.
