Nikon DSLR and HDR photography?
I'm looking for a Nikon DSLR camera that will do bracketing. Are there ones that will combine them for you or do you have to use a program to combine them. Which models do this?
Bracketing has been done by photographers for decades, manually choosing the over and under exposures based upon the lighting in the scene
You seem to want to let the camera do that for you, which is lazy and not going to provide you with the best set of exposures if you intend to combine them to make HDR images
It is better to first take meter readings in the shadow area and highlight areas and then depending upon the difference in exposure, determine both the number and the exact exposures you will need to capture.
That said, ANY dSLR can produce the necessary image files to produce HDR images. You will also need a tripod and remember to use the shutter speed to adjust the exposures, NOT the aperture. Changing apertures will cause depth of field changes which will make the resulting merged image files look funny
If I need to extend the dynamic rage of a scene, I use the Photoshop Merge to HDR Pro tool

Easy as pie. Though if you're serious about your photography, I'd follow fhotoace's very good advice.
