Any fully adjustable camera is good for a beginner, since whether you spend $700 for an entry level dSLR or a $43, 000 Hasselblad, they all work the same, so the learning curve will be identical.
The D7100, would be an excellent camera since it uses the newest technology and has one of the highest performing APS-C sensors available at this time
Any DSLR can be used for a beginner. However realize that the D7100 is a high-performance camera and you will not get the benefit of it's full capacity unless you have high-performance lenses to go along with the camera.
The mistake all too often made is buying the most expensive camera you can afford, then picking out a lens almost as an afterthought - and usually one that is not up to task.
And with the D7100, the kit lens (Nikon AF-S 18-105mm) is OK to start with, but you will want to plan on replacing it.
I own a D7100, and I have a 18-105mm kit lens that I got when I bought a D90 a few years ago. I upgraded that lens to a Sigma 17-50mm f/2.8 when I bought the D7100, which is a far superior lens (although the zoom range is less).
Only if you don't want an articulating LCD that flips out to the side for video. Get the D5200 for that. Otherwise the D7100 is a nice photographer's camera with plenty of control and potential for excellent photos even in Auto mode.
