Using 2 Camera Bodies, which one is more like it?

For some reason, i don't think combination of D700 & Canon 60D is not good enough, but you can choose if you got the reason…

Y would you wanna carry a Canon & a Nikon? U'd hafta take double the lenses, too… Way better 2 use either Canon or Nikon.
I'd go w/ #3, D700 x2. Canons r good, but I don't like them as much as Nikon.

MOST photographers pick one brand and stick with it. Very few would have both a Nikon and a Canon DSLR… That would mean you would need twice as much equipment (lenses, flashes, etcetera).
Even though my backup is not the same model as my main camera, they are both Canons and everything I have is compatible with both (except the batteries).
Let's say you need skills to make either of these perform. The fact that you do not seem to have a current investment in either system suggests to me that you're new to the game. If that's so you're a long way away from having the ability to shoot weddings.
Either full frame combo will do nicely.
Stick to one brand-you can't use lenses from a Nikon on a canon so you'd have to have double duty everything.
Then the decision becomes personal-which brand fits you more?
Me? It's Canon.
OK… Now more decisions. How much money do you want to invest? If you have to save some money I'd go for the 5d2 and the Canon 7D which is not one of your choices for some reason. If I were in a GIANT pinch and hurting for $ then I'd go for the 5d2 and 60D.
If I were purchasing exactly what I want? I'd go for the 5D2 x2. Or better yet the 5d2 and the 1D4. I shoot with a 5d2 and a 1D3 for weddings currently.
Lenses: 70-200 f/2.8L IS USM III and the 24-70 f/2.8L. If those are out of the price range then I'd step down to the Sigma 70-200 f/2.8 OS HSM lens and the Tamron 28-75 f/2.8. You gotta have that 2.8 for weddings.
Others I'd want to have: 50mm f/1.8 or f/1.4, 85mm f/1.8 and 28mm f/1.8. A good macro lens of some sort.
Now should I choose to go with Nikon? I'd go for budget with the D700 and the D7000. A little more room in the budget? Then the D700 and the D300S. If purchasing what I want it'd be 2 D700's.
Lenses: The same ones above only Nikon version.
Make sure you add in either 2 Canon 580EX II flashes or Nikon SB900 flashes.
In my opinion nobody in their right mind would carry two different brands of camera. So my picks would be 2, 3 and 6.
Why would you carry Canon AND Nikon? That means double the lenses.
In order of preference (or just take my first choice and ignore the rest).

Why Canon first? Cause I'm a Canon shooter and am more familiar with Canon than Nikon.
I'd prefer two of the same so batteries, grips and the likes can be shared between the two if needed.
The biggest drawback to mixing brands is that you need two sets of lenses. Weight and expense are two reasons against that. Being a Canon shooter and not familiar with the Nikon models, I would pick a variation of #5. Instead of the 60D, I would pick the 7D. APS-C cameras like the 7D are good for wildlife because of the telephoto factor. The 7D is also good for sports and action as it has a high burst rate and sophisticated auto-exposure. The 5D has a 35mm sensor, which gives shallower depth of field for shots like portraits. But it's slower.
