Well they're both excellent - almost identical high ISO performance, video sizes are similar but the D7000 wins here, build quality is awesome on both, the D7000 has 6 vs 7fps, D7000 has 39 vs 11AF points which is a huge difference.

I'd go with the D7000 just because Canon and Nikon are my favorite and are more famous, for a reason. Btw, I'm shooting with the 7D.

Either camera will work just fine. The D7000 has a more advanced autofocus that should do better if you are shooting a moving animal but, that doessn't mean you can't get equally great images out of the Pentax because the limiting factor is really the person behind the camera. All that said, I'd personally go with Nikon because of the greater range and availability of lenses.

Nikon makes 70-200mm, 70-300mm, 80-400mm, and 200-400mm zooms as well as super telephoto primes ranging from 300mm up to 600mm plus teleconverters to fit nearly all of them. Some of them are too expensive for anyone but a pro to own but, there are shops offering nearly all of them for rent if you find you need such lenses for Nikon or Canon. There are shops that rent glass for Pentax too, just not quite as many of them. It should also be noted that Pentax doesn't currently offer anything over 300mm when can be a little short for wildlife, especially birds. Alternately, both Sigma and Tamron lenses exceeding 300mm for Nikon, Pentax, and others but, I prefer to stick with OEM lenses if at all possible.
