How to keep the exposure the same in a stop motion video?

Hi - I'm using a Nikon d40x to shoot a stop motion video. The video is of a white notepad with objects moving on and off it. The problem is, the exposure keeps on changing every frame, because the amount of white in the frame is changing.
I have the camera set to 'M', with a constant shutter speed and aperture. I also have a pre-defined white balance and manual focus. Can anyone tell me what I'm doing wrong?

Is the ISO set to auto? It shouldn't be.
