How to set my Nikon D60 to take black and white photos?

I know how to do it after the fact under the monochrome tab but how do I make it shoot black and white?

Why on earth would you want to do that?
Doing it later in post processing gives you much better results, plus you get to keep the original, too.

If you're determined to do it anyhow, you'll find the answer in your manual. Download a new one if you lost the book.
