The Canon you have is fine. Why buy a Nikon?

Lenses I use;
- 50mm f1.8
- 85mm f1.8
-24-70mm f2.8
- 70-200mm f2.8

You also need a good off camera lighting system.

The lens most of us use when shooting fashion in a studio is the 24-70 mm lens

When shooting runway fashion, we use the 70-200 mm

The D7000 is a fine camera, but you may want to consider the D7100, the newest version of that camera series

In the studio, we use studio flash units and use light modifiers to control the lighting

When shooting runway, we use a dedicated flash and flash diffuser of some kind.

Though I'm a Nikon DSLR user I can't see any great reason to change from your Canon 60D. For fashion shots of whole figure you need a lens around 'normal' or slightly longer, so around 30mm to 40mm on your Canon or on the Nikon D7000. The zoom which came with the Canon (presumably 18mm to 55mm or similar) would be a good start. If you become really successful at fashion photography you might want to buy a superior quality 'normal' zoom, or a prime lens around 35mm.
