Can I use the "af-s nikkor 18-55mm 1: 3.5-5.6 g" that came with my Nikon D3100 on my New Nikon D5100? Or is it incompatible and will break it?

Of course you can.
You can use ANY of the Nikkor AF-S lenses on your camera
Do you really think Nikon would sell you a lens kit with your camera if it would harm it in any way? Really?

Yes, you can use it. DSLR lenses are not camera specific. Any F-Mount Nikon lens will fit any Nikon DSLR.
