Camera settings on Nikon d3000?

I just bought a Nikon d3000 and whenever I try to set the photos to be taken in black and white, or sepia, I can't. I go to Picture Control and I can't go any further because it says "This option is not available with current setting." What settings do I need to have in order to take these photos?

Added (1). BTW, I don't feel like reading the manual so if someone can list step by step things that'd be great.

Well you are using auto- which is a big no no. For more control, go to "P" mode. It stands for program.

you need to learn how to correctly balance ISO, Shutter speed, and Aperture to conform to what you are shooting to get the results that other photographers get.

reading the manual is crucial to understanding your camera. We will not help you. As a photographer you need to learn on your own.

The D3000 has a helpful guide mode if I understand, which will help you set up things.

Cameras are not magic, as a photographer, you assume the responsibility to control your camera and do what you want to do with it. If you use a DSLR camera as a point and shoot on auto, you will get results like a point and shoot. I promise you that you will never get shots like these:

if you keep it on auto.

on another note. It is not recommended that you actually take a picture using black and white or whatever mode, because it is easier to do that in a photo editing program. Lets say you take a great picture in seipia, but want color… You won't get it.

Shoot in the best quality, largest jpg or RAW setting, color, then use an editing program to put filters on it. That way, you have the original file, but from color, you can go to sepia, aqua, b/w, etc.
