Are canon videos softer than nikon videos?

I noticed there's something a little different about canon videos than nikon videos

No. That would be the difference in your lens quality.
If you put a bad quality lens (like the kit lens) in front of the sensor then you're going to get poor quality images/videos regardless of the camera.

I've got no experience with Nikon cameras at all. I do know that my video, from my t1i, looks pretty good for a dslr. Like this.

Soft and sharp can be controlled so it depends on the user not the brand.
