Grayed out options tell you that you are using a feature the controls that feature automatically.

If you change to the manual mode and control your exposure using the light meter in the viewfinder, place your ISO to a specific ISO and preset your white balance to match the lighting, all the other features should be available to you.

It is only when you use your camera in the program mode or set white balance and ISO to "auto", will features gray out

There's also another time then the menu will show grayed out settings and that is when there's no memory card in the camera or it needs formatting.

How much time have you spent reading the cameras user manual?

If you are in Auto or a scene mode it won't allow you as much custom control. P, A, S, or M should allow you access to the Picture Control menu.

You have to get out of auto mode to access the advanced functions.
