The best bang for your buck, in the $1000 range is the Canon EOS 60D with kit 18-55 lens.

It is great that you have $1000 to start with. Canon and Nikon are both great camera companies so comparing them would be like comparing Mercedes and BMW. Nikon announced the D5200, which is an entry level camera that replaces the old D5100.It has a 24.1 megapixel sensor and a burst rate of 5 frames per second when taking still photos. Canon also announced a new camera to its Rebel series which is a beginning entry level camera series. The T5i replaces the its predecessor, T4i. All these new DSLRs are under $1000. 60D from Canon is also a great as well. It was announce back in 2010 and it is replaced by the new 70D this year.
Since you are really into photographyI'd personally suggest you the Nikon D5200 because of its 39 focus points which the T5i only has 9 cross type auto focus points (although having cross type points is a joy, 9 isn't gonna beat 39 non cross type auto focus points in anyway).
For photography, the lens is always the important part then the body so after you get your camera and a kit lens, start saving up for a lens!
As always, check all these cameras yourself in Bestbuy or your local electronic store. You can always bring a SD card with you and shoot test shots like crazy in the store and then compare the image quality at home. Try to find out which user interface you like or which camera body feels better on your hand.

The Pentax K-500, Nikon D5200 or the Canon T5i.

All are with in your budget. Don't just listen to someone telling you to "buy Nikon" or "buy Canon"

Both Nikon and Canon are ALWAYS going to be pretty much tied in just about every way. If Nikon comes out with something new or better then what Canon has. Then Canon will only follow up with an equivalent product.

What you need to do is go and check out local camera shops in your area and actually hold different cameras in your hands. See how they feel to you, see how quickly the controls and menu's work for you. In the end its up to you! Not the people here.
