In the program mode, you camera will work just like a P&S camera.
If you use the camera in the manual mode, you can choose your own settings using the camera light meter.

At 18-mm, the largest aperture is f/3.5. At 55 mm, the largest aperture is f/5.6
The smallest lens aperture is f/22
If you use the aperture priority mode, you have control over the lens aperture and the camera picks the correct shutter speed.
Under all cases you have control over the ISO setting.

Automatic locks oyu out of all of those settings so no. But why would you use your DSLR like a point and shoot?

Max aperture? It's written on the lens "f3.5-5.6" so on that lens is varies depending on the focal length (how zoomed in or out you are) from f3.5 at the wide and (18mm) to f5.6 at the longer end (55mm).
Remember that the smaller the fnumber, the WIDER the aperture.
Minimum aperture? Probably f22.
