On my Nikon DSLR, there's an ISO button. On my Nikon P7xxx, you can rotate a switch on top to ISO and press the button. On other Nikon cameras, I suspect there are similar and quite different ways to set the ISO. Your manual is your friend.
The exact pathway to adjust it varies with the model. However, there are fully automatic modes that have no manual control of ISO. You have to be in a mode that allows it. Even with the point and shots, that don't have direct control over speed and aperture, there's a choice between modes that offer partial control such as ISO and those that do not.
