SOme older manual Nikon lenses are manual focus only, no matter what body you attached them to.

For example, I have a 135mm f2.8 manual lens - I use it on a D300.It meters correctly but I have to focus it and stop the aperture down manually.

I suspect that this would be the same on your D700. All old Nikkor lenses (AI lenses since 1959) will fit, but whether they focus will depend on the lens. Do NOT use pre-AI lenses without modification!

With a few exceptions, yes it will. Your manual will give you a lens compatibility list.

But of course, you will not have autofocus capability.

And many manual lenses are also non-CPU (no electronic information from the lens to the camera), which means you will probably have to put the camera itself into manual exposure mode.

However, while I'm not sure about the D700, I do know that the D7000 has an aperture feeler pin for those AI lenses, so that the camera mechanically connects to the aperture setting.

But you know what - any of us that are 50yrs old or older grew up using cameras that only had manual exposure, so it is really not that big of a deal.

Not all of them. Firstly for the lenses to fit, they would have to be AI, AI-S or AI-P lenses. Non-AI lenses (the Nikon alphabet series) need to be appropriately modified for the lenses to function.

With AI and AI-S lenses you will also need to input the lens data into the camera correctly for the metering system to work properly, it also has the advantage of giving you correct data in the EXIF.

AI-P lenses have a CPU and electrical contacts, and will function just like your AF and AF-S lenses in manual mode.

EDIT - Important addition, some pre-AI fisheye lenses are invasive lenses they can't be modified to work on modern cameras.

Thatnikonguy on youtube for instance has a 50mm F1.2. Manual focus Manual settings.

Of course it still tells the body that its a lens so it will be easier to handle then an M42 lens. Just saying those can't even talk back to the body.
