What is the next step up from a Nikon D7000?

The D7100, and then you start getting into full-frame.

NOBODY out-grows any DSLR, though, particularly the superb D7000.

If you've got a D7000 why would you even think of upgrading from a very fine dslr? I'm a Canon guy and that's all I recommend but Nikon makes excellent gear also.

If you know what you're doing with your camera there's really no need to upgrade unless you're getting into professional work for publication.

At present that would be the Nikon D7100,

While the D7100 is a fine camera, if you want to upgrade to a newer Nikon APS-C sensored camera, wait until the Nikon D400 or D7200 cameras become available.

Until then, spend a lot of time learning the fundamentals of photography and using your current camera intuitively

Most photographers buy a few new lenses long before they "upgrade" their camera body, especially one as capable as your D7000.

If you are thinking about a bit more serious upgrade, try D600 or D610, but as people before me said, you can always try new lenses first, Also, you could try getting an advanced Canon to see if it fits you better (60D, 70D or even 7D).

If you are contemplating a move up to FX, spend some time looking at reviews and prices of FX lenses.
FX can give you lower noise and allow you higher ISO than DX. However, the prosumer FX lenses may not give you as good corner sharpness on the FX frame as some prosumer DX lenses on the DX frame.
