You do not understand what EV is used for when using s fully adjustable camera

Look in the user manual and see if what you are expecting is what the manual says you will get

Why on earth are you using Live View. Do you what your camera to be an expensive P&S.

Get out of live view, turn off the auto ISO and auto white balance and shoot in manual using the cameras fine light meter. When you can do that intuitively with accuracy both in exposure and composition, then use things like the aperture priority mode, etc.

With the white balance out of auto, you will be able to train your eyes to see the differences in colour different lighting types give your images.

Set your camera for sunlight when shooting under the sun, shade setting when your subject is in the shade, overcast when you are under cloud cover, fluorescent when under fluorescent lighting and incandescent when under tungsten lighting.

You have much to learn about using a camera. A class in photography would be a big step forward

It looks like the setting you are tinkering with is the exposure compensation. For the average scene a setting of zero is usually best. Some need to be adjusted a little. Negative 5 is a lot of underexposure. I'm not sure when that much is ever useful.

Somethings wrong with my eyes. I put on 5 pairs of dark-tinted sunglasses, and now I can't see.

That's basically what you did with your D3100. You cranked down the light-gather setting of the camera 5 whole levels. Then when you switched to liveview (why would you ever use that?) everything is dark.

What you're doing has nothing, nothing to do with "switching between exposures".

There's nothing wrong with your camera that a good read of the user's manual and some practice won't fix.
