I was wondering, if i adjust iso sensitivity to maximum sensitivity 6400 and minimum shutter speed to 1/640 do i loose image quality?

It depends.

I routinely shoot at 3200 ISO and with the noise reduction feature in Adobe Lightroom 3, you can get rid of a lot of noise.

First here is what an older Nikon D300 can do in low light at 3200 ISO

As you can see, when used correctly, there's little noise.

Your D7000 has a sensor that should provide even better image quality than the older D300
