Other than the new J1 V1 lenses, you can pretty much use any lens on any camera. There are a few exceptions, and those would be listed in the owner's manual for the camera.
But for the most part, any F-mount lens made since 1959 will work on any current DSLR. Keep in mind though that depending on the lens, you may have to use manual focus and/or manual exposure modes as the older lenses did not have all of the modern features current lenses have.
And entry level Nikon DSLRs such as the D3100 and D5100 do not have built-in focusing motors, so autofocus will only be available with AF-S series lenses. Cameras such as the D90 and D7000 do have focus motors, so they can autofocus the AF as well as AF-S lenses.
