I started off the same as you and got really into it.
I bought the canon rebel t4i for $700 it came with a lens. I recently purchased a tripod for $75 and photoshop elements 11 for $120

I do research and watch tutorials on editing and I'm doing pretty good, it's easy to learn if you make the effort

With a DSLR, you really need to be committed to the idea of learning about the photography basics - exposure, lighting & composition to get the best out of it. Sure, you can use it on Auto, but then you might as well have stuck with a point & shoot!

The genres you listed are fairly varied though, & what you will find is that whereas you shot everything with one lens before, you may need more than one to adequately cover the needs you want.

Good portrait lenses are in the 50mm - 135mm or so range. Landscapes might require wide angle lenses (10-20mm) although that's for 'dramatic' viewpoints. Wildlife, if it's far away & shy will require a telephoto lens (200mm +).

Entry level DSLR's start around £300. They come with a kit lens (usually 18-55mm). You can add a longer lens (55-200mm) and these two will get you started.

As to which make/model - go into a camera store with your budget set & ask to try them out - check for button position, menu choices & general weight & 'feel'. Buy whichever feels best for YOU.

Sorry it's not a a detailed answer but I'm in the same place you are my friend. Used my iPhone 4 up until recently when I borrowed a friend nikon D60. I've preferred a Nikon D3200 from a camera shop which arrives on Friday ( CAN'T BLOODY WAIT) I've used the D3200 on several different occasions and I have to say this is a great camera. Just started trying to get proper shots. If you have instagram my account is @niallcw.
