>Difference: several, larger sensor, interchangeable lenses, more control
>image quality: again several, clarity, exposure, resolution, color

pix at night: look for ISO and noise reduction and vibration control
modify the light: not found on low end compacts, upper end compacts and DSLR's. Look for manual controls, abbreviated PASM
pix in shadow: not a problem for most cameras, being outdoors and in a shadow still provides lots of light
>camera brand: these four brands compete with features and quality. Any of them will give you good results. Nikon and Canon are the biggest sellers, Sony is a strong competitor, FujiFilm also competes. Which is best? It all depends.

Suggestions:
Subcompacts: Nikon Coolpix P300 or Canon PowerShot S95
Compacts: Canon PowerShot SX130 IS or Casio Exilim EX-FH100
Advanced P&S: Canon PowerShot G12 or Nikon Coolpix P7000 (I own this one, wait for the P7100, just starting to ship)
Super Zooms: Nikon Coolpix P100 or Nikon Coolpix L120
Interchangeable Lens: Sony SLT-A55V or 33V or Panasonic Lumix DMC-GH2 or GH1K
DSLR: Canon EOS 60D or Nikon D7000

As you can see, not are only is there 100s of cameras to choose from, but there are many categories of cameras. You need to pick a category, then start comparing the top models. I would look at at least the top 5 models.

Nikon d3100 is useful if you're looking to learn-it can teach you, for example, how to capture moving subjects, soften backgrounds, or take night portraits.
