How do I use bracketing on my Nikon d7100?

Bracketing is explained on page 133 of your manual. One of the first things you need to learn is that there are several types of bracketing: exposure, flash level, ADL, and white balance. Probably the most common is exposure.
I prefer to use Continuous shooting when I bracket. This allows me to take 3 shots very quickly, so that the lighting conditions don't change. Continuous is explained on page 7 of your manual.
