Set to Bulb. Press and hold shutter release button down to open the shutter. Release to close.

Since you will be shooting in prolonged times, it is best to secure the camera on a tripod. To best reduce camera shake introduced by your hand while holding the camera (yes it will even if on a tripod), use a remote shutter release cable. Get one that is compatible to your camera. The remote shutter can be locked so you don't have to press the button for 3 hours continuously. You simply release the lock to close the shutter.

Read the camera's manual to be sure about everything. See Bulb mode.

Switch the camera mode to M. Turn the dial until it becomes "BULB". Set appropriate aperture and iso and place your camera on a study place or on a tripod with a remote release. Hold down the shutter release/button until you want it to stop. If the image is over exposed (too bright), hold it for shorter next time. If it is too dark, hold the button for longer next time.

The camera comes with an owner's manual for exactly such questions.

Nikon does a good job of describing how to shoot in Bulb mode on page 58 of your Reference Manual.
