Actually All dSLR's are not any more difficult to use than others. They all work the same. You balance the ISO, shutter speed and lens aperture and learn to use the cameras light meter. So it does not require any more in the way of skills than a $40, 000 Hasselblad.

Both Nikon and Canon cameras should have about equal resale value, however cameras like the Canon 40D, Nikon D40, D90 just hold their value because they are classics.

The Nikon D3100 and new Nikon D3200 do have a guide feature that helps new users when they are unsure of what a specific feature does when activated on the camera

The slight difference in cost between the D3100 and D3200 is well worth saving your pennies

ALL cameras clarity are based upon the users skills. If you are not willing to learn some basics in photography and videography, a dSLR may not be for you.

There really is a "best". Different yes but not best.

You see these two companies have been making quality equipment for decades and probably will go right on with that. Canon and Nikon, it's a preference not a best or better.

I happen to have and prefer Canon. A friend of mine is a Nikon guy. Just pick one.

Find a dealer, handle them and see which you prefer.

Sony's SLTs will blow either out of the water for video, though.
